Description

Ingredients

  • 2 cups fresh pitted cherries (or frozen, well-drained)
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 cups all-purpose flour
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1/2 teaspoon lemon juice
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish or line with parchment paper.
  3. In a large mixing bowl, beat the softened butter and granulated sugar until creamy. Blend in the eggs and almond extract.
  4. Gradually add flour and stir until a dough forms.
  5. Press about two-thirds of the dough into the bottom of the prepared pan.
  6. In another bowl, mix the pitted cherries with sugar and lemon juice, then pour this mixture over the crust layer.
  7. Crumble the remaining dough over the cherry filling.
  8. Bake for 35-40 minutes, or until golden brown and the filling is bubbling.
  9. Let cool completely, dust with powdered sugar, and cut into squares before serving.

Notes

For extra flavor, consider adding a pinch of cinnamon or nutmeg to the cherry filling. Allow bars to cool for easier slicing.
