Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the egg and mix in the milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently; a few lumps are okay.
- Preheat a non-stick skillet over medium heat and add butter or oil.
- Pour about 1/4 cup of batter onto the skillet and cook until bubbles form, then flip and cook until golden brown (approximately 2-3 minutes per side).
- Keep finished pancakes warm under a kitchen towel while cooking remaining batter.
- Stack pancakes high and top with syrup and desired toppings.
