Ingredients

  • 2 teaspoons baking powder

  • 1 cup milk (or buttermilk)
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, beat the egg and mix in the milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir gently; a few lumps are okay.
  4. Preheat a non-stick skillet over medium heat and add butter or oil.
  5. Pour about 1/4 cup of batter onto the skillet and cook until bubbles form, then flip and cook until golden brown (approximately 2-3 minutes per side).
  6. Keep finished pancakes warm under a kitchen towel while cooking remaining batter.
  7. Stack pancakes high and top with syrup and desired toppings.

Notes

Allow batter to rest for a few minutes before cooking for fluffiness. Avoid overcrowding the skillet for even cooking.
