- 4 chicken thighs
- 1 pound baby potatoes
- 1 cup crumbled feta cheese
- 4 cloves garlic, minced
- 2 tablespoons fresh oregano
- 2 tablespoons fresh rosemary
- 1 lemon, zested and juiced
- 4 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and garlic, then sear until golden brown, about 6–7 minutes.
- Wash the baby potatoes; cut larger ones in half. Nestle them around the chicken, then drizzle with more olive oil, lemon zest, and juice. Sprinkle with oregano and rosemary.
- Crumble feta over the top of the dish.
- Transfer the skillet to the oven and bake for 30–40 minutes.
- Let it sit for a few moments before serving.
Notes
For variations, substitute chicken breasts for a leaner option or use crumbled goat cheese instead of feta.
