  • 4 chicken thighs
  • 1 pound baby potatoes
  • 1 cup crumbled feta cheese
  • 4 cloves garlic, minced
  • 2 tablespoons fresh oregano
  • 2 tablespoons fresh rosemary
  • 1 lemon, zested and juiced
  • 4 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and garlic, then sear until golden brown, about 6–7 minutes.
  3. Wash the baby potatoes; cut larger ones in half. Nestle them around the chicken, then drizzle with more olive oil, lemon zest, and juice. Sprinkle with oregano and rosemary.
  4. Crumble feta over the top of the dish.
  5. Transfer the skillet to the oven and bake for 30–40 minutes.
  6. Let it sit for a few moments before serving.

Notes
