Description
A comforting and flavorful one-pan dish combining tender chicken, fluffy rice, and vibrant vegetables, perfect for family gatherings.
Ingredients
Scale
- 1 lb boneless chicken breasts or thighs
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup chopped bell peppers
- 1 cup corn
- 1 cup peas
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- Fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Heat olive oil over medium heat in a large skillet. Add chopped onions and bell peppers, stirring until they soften, about 3-4 minutes.
- Push the veggies to one side and place chicken pieces in the skillet. Cook until golden brown on both sides, about 5 minutes.
- Sprinkle cumin, chili powder, and paprika over the chicken and veggies, mixing well to coat everything.
- Add the rice and pour in the chicken broth. Bring the mixture to a gentle simmer.
- Reduce the heat to low and cover. Cook for about 20 minutes, or until the rice is tender and has absorbed all the liquid.
- Fluff the rice with a fork, squeeze fresh lime juice over the top, and stir in chopped cilantro.
Notes
Ensure accurate measurements of broth for perfect rice texture. Feel free to customize the vegetables based on availability.
