Ingredients

  • 8 oz Mushrooms, sliced
  • 28 oz Canned tomatoes (whole or diced)
  • 4 cups Vegetable or chicken broth
  • 1/4 cup Fresh basil, chopped
  • 1/4 cup Fresh parsley, chopped
  • Salt and pepper to taste
  • Dried herbs (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and sliced mushrooms, stirring until softened and fragrant.
  2. Pour in spaghetti, followed by canned tomatoes (with juice) and broth, ensuring pasta is submerged.
  3. Season with salt, pepper, and herbs; stir and bring to a gentle simmer.
  4. Cover and let simmer, stirring occasionally, until spaghetti is al dente, about 12-15 minutes.
  5. Stir in fresh basil and parsley; finish with a drizzle of olive oil or grated parmesan cheese if desired.

Notes

Adjust liquid levels as needed during cooking. For a thicker sauce, simmer with lid off. Add seasonal vegetables for variety.
