- 4 cloves Garlic, minced
- 8 oz Mushrooms, sliced
- 28 oz Canned tomatoes (whole or diced)
- 4 cups Vegetable or chicken broth
- 1/4 cup Fresh basil, chopped
- 1/4 cup Fresh parsley, chopped
- Salt and pepper to taste
- Dried herbs (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add minced garlic and sliced mushrooms, stirring until softened and fragrant.
- Pour in spaghetti, followed by canned tomatoes (with juice) and broth, ensuring pasta is submerged.
- Season with salt, pepper, and herbs; stir and bring to a gentle simmer.
- Cover and let simmer, stirring occasionally, until spaghetti is al dente, about 12-15 minutes.
- Stir in fresh basil and parsley; finish with a drizzle of olive oil or grated parmesan cheese if desired.
Notes
Adjust liquid levels as needed during cooking. For a thicker sauce, simmer with lid off. Add seasonal vegetables for variety.
