Description

Delightful scones infused with the bright zest of oranges and the warm spices of chai tea.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced
  • 1 teaspoon chai spice blend (cardamom, cinnamon, ginger, black pepper)
  • 1/2 cup heavy cream or yogurt
  • Zest of 1 orange
  • 1/4 cup fresh orange juice

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the chai spice blend.
  5. In another bowl, whisk together the cream, orange zest, and orange juice. Pour into the dry ingredients and stir until just combined.
  6. Turn the dough onto a floured surface and gently knead a few times. Pat into a circle about 1-inch thick.
  7. Cut the dough into 8 triangles or use a round cutter.
  8. Arrange the scones on the baking sheet, brush with cream for a golden finish.
  9. Bake for 15-20 minutes until golden brown and a toothpick comes clean.
  10. Cool slightly on a wire rack before serving.

Notes

Serve warm with butter or clotted cream. For a twist, add chocolate chips or nuts.
