Delicious muffins combining the sweetness of ripe strawberries and zesty oranges, topped with a buttery streusel.

- 1 cup fresh strawberries, chopped
- 1 orange, zested and juiced
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 eggs
- 1 cup milk (whole or buttermilk)
- 1/2 cup butter, melted
- Streusel topping: 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup butter, 1/2 tsp cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing it or lining with paper liners.
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and nutmeg.
- In another bowl, beat the eggs and add the milk, orange juice, and melted butter. Mix well.
- Slowly add the wet mixture to the dry ingredients, stirring just until combined. Fold in chopped strawberries and orange zest gently.
- In a small bowl, mix softened butter, flour, brown sugar, and cinnamon for the streusel topping until crumbly.
- Scoop the muffin batter into the prepared compartments, filling each about 2/3 full. Sprinkle the streusel topping generously on top.
- Bake for about 18-20 minutes or until a toothpick comes out clean.
- Allow muffins to cool in the tin for a few minutes before transferring to a wire rack. Enjoy warm or at room temperature.
Notes
Don’t overmix the batter to keep muffins light and fluffy. Use room temperature ingredients for best results.
