- 12 oz Pappardelle pasta (fresh recommended)
- 2 tbsp Calabrian chili paste or whole chilis
- 1 lb Italian sausage (sweet or spicy)
- 28 oz crushed tomatoes
- 2 tbsp extra virgin olive oil
- 4 cloves garlic (minced)
- 1/4 cup fresh basil (chopped)
- 1/4 cup fresh parsley (chopped)
- 1/2 cup Parmesan cheese (grated)
Instructions
- Prepare the Pasta: Bring a large pot of salted water to a boil. Cook the pappardelle according to package instructions until al dente. Reserve about a cup of pasta water, then drain and set aside.
- Sauté the Sausage: In a large skillet over medium heat, drizzle olive oil. Crumble the sausage into the pan, cooking until browned and cooked through. Remove and set aside, leaving some fat in the pan.
- Create the Sauce: Add minced garlic to the skillet, sauté for about a minute. Stir in Calabrian chili paste, then add crushed tomatoes. Let simmer for about 10 minutes.
- Combine: Return the sausage to the skillet, stir to combine with the sauce. Toss in the cooked pappardelle, adding reserved pasta water as needed for desired consistency.
- Finish the Dish: Stir in fresh basil and parsley. Serve hot, topped with grated Parmesan cheese.
Notes
For a lighter version, consider substituting Italian sausage with ground turkey or mushrooms. Adjust the heat level by varying the amount of Calabrian chili used.
