- 4 Bone-in, skin-on chicken thighs
- 1 cup freshly grated Parmesan cheese
- 4 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley or thyme, chopped
- Salt, to taste
- Black pepper, to taste
- Optional: Crushed red pepper flakes, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry with a paper towel and season generously with salt and pepper.
- In one bowl, combine the grated parmesan cheese, minced garlic, and chopped herbs. In another bowl, melt the butter and mix it with the olive oil.
- Dip each chicken thigh first into the butter mixture, then into the parmesan mixture, ensuring it’s well-coated.
- Place the coated thighs skin-side up in a cast iron skillet or baking dish and bake for 35-40 minutes until the skin is golden and crispy.
- For the garlic sauce, in the same skillet, add leftover butter and any garlic bits, let it sizzle and drizzle over the cooked chicken before serving.
- Garnish with additional herbs if desired and serve alongside your favorite side dishes.
Notes
For best results, use a cast iron skillet and ensure the chicken comes to room temperature before cooking.
