Ingredients

  • 45 fresh passionfruits
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Cut the passionfruits in half and scoop the pulp into a bowl, setting aside the seeds for garnish.
  2. In a medium saucepan, combine heavy cream, whole milk, sugar, and vanilla extract. Heat until warm and the sugar dissolves.
  3. Remove from heat and let cool slightly. Stir in the passionfruit pulp, adjusting sweetness if needed.
  4. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (about 20-30 minutes).
  5. Transfer the churned ice cream to an airtight container and freeze for at least 4 hours until firm.
  6. Before serving, scoop the ice cream and top with extra passionfruit seeds or a sprinkle of sea salt.

Notes

For a dairy-free version, substitute coconut cream for heavy cream. Use high-quality passionfruit puree if fresh passionfruits are unavailable.
