Ingredients

- 4–5 fresh passionfruits
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 1 teaspoon vanilla extract
Instructions
- Cut the passionfruits in half and scoop the pulp into a bowl, setting aside the seeds for garnish.
- In a medium saucepan, combine heavy cream, whole milk, sugar, and vanilla extract. Heat until warm and the sugar dissolves.
- Remove from heat and let cool slightly. Stir in the passionfruit pulp, adjusting sweetness if needed.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (about 20-30 minutes).
- Transfer the churned ice cream to an airtight container and freeze for at least 4 hours until firm.
- Before serving, scoop the ice cream and top with extra passionfruit seeds or a sprinkle of sea salt.
Notes
For a dairy-free version, substitute coconut cream for heavy cream. Use high-quality passionfruit puree if fresh passionfruits are unavailable.
