Ingredients

  • Pasta (spaghetti, fusilli, or whole wheat)
  • 2 cups fresh basil
  • 1/2 cup nuts (pine nuts, walnuts, or cashews)
  • 23 cloves garlic
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Boil salted water and cook pasta until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a food processor, combine basil, nuts, and garlic; pulse until finely chopped.
  3. With the processor running, slowly add olive oil to create a smooth sauce; stir in Parmesan, salt, and pepper.
  4. Combine the cooked pasta with the pesto, adding reserved pasta water until desired consistency is reached.
  5. Serve immediately, garnishing with more Parmesan and optional red pepper flakes.
