Description

Ingredients

  • 2 cups puffed cereal (Rice Krispies or Corn Pops)
  • 1/2 cup peanut butter (creamy or crunchy)
  • 1/2 cup jelly or jam (strawberry, grape, or your choice)
  • 2 cups ice cream (vanilla or your choice)
  • Optional toppings: chopped nuts, chocolate chips, or sprinkles

Instructions

  1. Melt the peanut butter slightly to make it easier to spread without overheating.
  2. In a large bowl, mix the puffed cereal with just enough melted peanut butter to coat the cereal.
  3. On a parchment-lined baking sheet, press the mixture into circular shapes (about 1/4 inch thick) and freeze for 15-20 minutes.
  4. Spread a layer of jelly on one frozen cereal piece, add a scoop of ice cream, and top with another cereal piece to form a sandwich.
  5. Roll the edges in optional toppings, then return to the freezer for another 15-20 minutes.
  6. For better enjoyment, allow them to sit at room temperature for 5-10 minutes before serving.

Notes

For nut-free options, substitute peanut butter with almond, sunflower, or soy butter. You can also use crushed cookies instead of puffed cereal for a richer treat.
