  • 1 tsp ground cinnamon

  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Peel and chop the peaches into small chunks.
  3. Cream together butter, granulated sugar, and brown sugar until light and fluffy (about 4 minutes).
  4. Add in the egg and vanilla extract and mix until well combined.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  6. Gradually mix the dry ingredients into the wet mixture. Fold in the chopped peaches carefully.
  7. Scoop tablespoon-sized portions of dough onto lined baking sheets, spaced 2 inches apart.
  8. Bake for 12-15 minutes until edges are golden brown.
  9. Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
