- 2 ripe peaches, chopped
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Peel and chop the peaches into small chunks.
- Cream together butter, granulated sugar, and brown sugar until light and fluffy (about 4 minutes).
- Add in the egg and vanilla extract and mix until well combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- Gradually mix the dry ingredients into the wet mixture. Fold in the chopped peaches carefully.
- Scoop tablespoon-sized portions of dough onto lined baking sheets, spaced 2 inches apart.
- Bake for 12-15 minutes until edges are golden brown.
- Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
For an indulgent touch, drizzle a sweet glaze of powdered sugar and milk on cooled cookies.
