- 1 cup creamy peanut butter
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Line a mini muffin tin with paper liners.
- In a medium saucepan, combine unsalted butter, granulated sugar, and light corn syrup; heat over medium, stirring until sugar dissolves and it reaches a gentle boil. Boil for 2 minutes, then remove from heat and stir in vanilla extract and salt.
- In a separate bowl, mix peanut butter with a pinch of salt until smooth. Slowly pour the warm caramel into the peanut butter and stir until combined.
- Spoon the peanut butter caramel mixture into the prepared muffin tin, filling each cup 3/4 full and smoothing the tops.
- Chill in the refrigerator for at least 30 minutes until set, then gently remove from the tin.
- Serve chilled or at room temperature; they pair well with coffee or milk.
Notes
Watch the caramel closely to prevent burning. Allow caramel to cool slightly before mixing with peanut butter for best texture. Store in an airtight container in the fridge.
