Ingredients

- 1 lb boneless chicken (breast or thighs)
- 1/2 cup peanut butter
- 1/4 cup low-sodium soy sauce
- 2 tbsp fresh lime juice
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1–2 tbsp chili paste or powder
- Bamboo skewers, soaked in water
- Optional vegetables (bell peppers, zucchini, onion)
Instructions
- Marinate the chicken: Cut chicken into bite-sized pieces and mix soy sauce, minced garlic, grated ginger, and lime juice in a bowl. Add chicken and coat well, then marinate for at least 30 minutes.
- Prepare the peanut sauce: In a saucepan, combine peanut butter, soy sauce, lime juice, and chili paste over low heat, stirring until smooth.
- Skewer the chicken: Thread marinated chicken onto soaked bamboo skewers, alternating with vegetables if desired.
- Grill to perfection: Preheat the grill to medium-high and cook skewers for 4-5 minutes per side until chicken is cooked through.
- Serve and enjoy: Drizzle with remaining peanut sauce, garnish with peanuts and fresh herbs, and serve with lime wedges.
Notes
For an oven option, broil skewers on high for 10-12 minutes, turning halfway. Ensure the chicken pieces are similar in size for even cooking.
