Description

Deliciously marinated chicken skewers grilled to perfection, paired with a creamy peanut sauce and fresh cucumber slices.

Ingredients

Scale
  • 1 lb boneless chicken (breast or thighs)
  • 1/2 cup natural peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp lime juice
  • 3 cloves garlic, minced
  • 2 tbsp brown sugar
  • 1 tsp fresh ginger, grated
  • 1/4 cup coconut milk (optional)
  • 1 tbsp sesame oil
  • Wooden or bamboo skewers (soaked in water for 30 minutes)

Instructions

  1. Marinate the chicken: Combine peanut butter, soy sauce, lime juice, minced garlic, brown sugar, and ginger in a bowl. Whisk until smooth, then add chicken, ensuring it’s well-coated. Cover and refrigerate for at least 30 minutes.
  2. Prepare the skewers: Soak wooden skewers in water to prevent burning on the grill.
  3. Thread the chicken: Take marinated chicken pieces and thread them onto the skewers, leaving space between each piece.
  4. Grill the skewers: Preheat the grill on medium-high heat. Oil the grill grates, then cook skewers for about 3-4 minutes on each side until chicken is cooked through.
  5. Make the peanut sauce: Simmer the remaining marinade in a saucepan until thickened, about 5-7 minutes. Add coconut milk for creaminess if desired.
  6. Serve and enjoy: Serve skewers hot with peanut sauce and garnish with chopped cilantro and crushed peanuts. Consider pairing with cucumber salad or jasmine rice.

Notes

For a nut-free option, substitute peanut butter with sunflower seed butter. Feel free to use shrimp or firm tofu instead of chicken.
