Description

A delightful salad combining the sweetness of ripe pears and the tanginess of blue cheese, all tossed in a shallot vinaigrette.

Ingredients

Scale
  • 2 ripe pears (Bartlett or Bosc), sliced
  • 4 oz blue cheese, crumbled
  • 4 cups mixed greens (arugula or spinach)
  • 1 shallot, finely chopped
  • 3 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Wash the mixed greens thoroughly and pat dry.
  2. Slice the pears and discard the core; optionally, squeeze lemon juice on the pears to prevent browning.
  3. Make the shallot vinaigrette by whisking together olive oil, apple cider vinegar, chopped shallots, salt, and pepper.
  4. In a large bowl, combine the greens and sliced pears, then crumble blue cheese on top.
  5. Drizzle with the shallot vinaigrette and toss gently to combine.
  6. Serve immediately for the best freshness.

Notes

For added crunch, consider including toasted walnuts or pecans in the salad.
