- 2 ripe pears (Bartlett or Bosc), sliced
- 4 oz blue cheese, crumbled
- 4 cups mixed greens (arugula or spinach)
- 1 shallot, finely chopped
- 3 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar
- Salt and pepper to taste
Instructions
- Wash the mixed greens thoroughly and pat dry.
- Slice the pears and discard the core; optionally, squeeze lemon juice on the pears to prevent browning.
- Make the shallot vinaigrette by whisking together olive oil, apple cider vinegar, chopped shallots, salt, and pepper.
- In a large bowl, combine the greens and sliced pears, then crumble blue cheese on top.
- Drizzle with the shallot vinaigrette and toss gently to combine.
- Serve immediately for the best freshness.
