Description

A delightful Pear Cake that combines ripe pears with warm vanilla and spices, perfect for family gatherings.

Ingredients

Scale
  • 4 ripe pears, peeled, cored, and chopped
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon (or nutmeg)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Prepare the pears by peeling, coring, and chopping them into bite-sized pieces.
  3. In a mixing bowl, cream together the butter and sugar until light and fluffy. Gradually beat in the eggs.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, and spices.
  5. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the chopped pears gently until evenly distributed.
  7. Pour the batter into the prepared pan and smooth the top. Bake for 40-50 minutes or until a toothpick comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack. Serve warm or at room temperature.

Notes

For added flavor, let the cake sit overnight in the refrigerator before serving.
