Delicious pecan caramel thumbprint cookies that are perfect for sharing and invoking memories of family gatherings.
Ingredients

- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 cups all-purpose flour
- 1 cup toasted pecans, chopped
- 1 cup caramel sauce (homemade or store-bought)
- 1 teaspoon pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and sugars until light and fluffy. Beat in the eggs one at a time, adding the vanilla extract, and mix well.
- Slowly incorporate the flour and nuts until the mixture forms a soft dough. Be careful not to overmix.
- Roll tablespoonfuls of the dough into small balls, about one inch in diameter. Place them on the prepared baking sheets, spacing them a couple of inches apart.
- Press into the center of each cookie to create a well for the caramel.
- Bake for about 12-15 minutes, or until the edges are lightly golden but the centers remain soft.
- Once cooled slightly, fill each thumbprint with caramel sauce.
- Allow to cool completely on a wire rack before serving.
