Description

Delicious Pecan Pie Bars with a buttery shortbread crust and a rich, gooey pecan filling. A family favorite that brings people together.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cut into cubes
  • ½ cup granulated sugar
  • 1 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups chopped pecans
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour and sugar, then cut in the butter until the mixture is crumbly.
  3. Press the mixture firmly into the bottom of a greased baking dish to create an even base and bake for 15 minutes or until lightly golden.
  4. In another bowl, whisk together the eggs, brown sugar, vanilla, and a pinch of salt until smooth.
  5. Fold in the chopped pecans, ensuring they’re evenly distributed.
  6. Pour the filling over the baked crust, spreading it evenly.
  7. Return the dish to the oven and bake for an additional 25-30 minutes until the filling sets and edges are bubbling.
  8. Cool completely in the pan before cutting into squares. Dust with powdered sugar for a touch of elegance.

Notes

Letting the bars sit in the fridge for a couple of hours enhances the flavors and makes slicing easier. Avoid overmixing the filling.
