- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon peppermint extract
- 1 cup chocolate chips (milk or dark)
- 1/2 cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C).
- Cream the butter and sugars together in a large bowl until fluffy, about 2-3 minutes.
- Add in the eggs and peppermint extract, mixing until well combined.
- In another bowl, sift together the flour, cocoa powder, and a pinch of salt. Gradually add the dry ingredients to the wet mixture, stirring gently.
- Fold in the chocolate chips, reserving some for topping if desired.
- Scoop tablespoon-sized portions onto a lined baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes, until edges are firm but centers remain soft.
- Let cool for a couple of minutes before transferring to a cooling rack.
- Melt remaining chocolate and dip cookie tops, sprinkle with crushed peppermint, and let set.
Notes
Store cookies in an airtight container for up to a week. They can also be frozen for later enjoyment.
