Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon peppermint extract
  • 1 cup chocolate chips (milk or dark)
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and sugars together in a large bowl until fluffy, about 2-3 minutes.
  3. Add in the eggs and peppermint extract, mixing until well combined.
  4. In another bowl, sift together the flour, cocoa powder, and a pinch of salt. Gradually add the dry ingredients to the wet mixture, stirring gently.
  5. Fold in the chocolate chips, reserving some for topping if desired.
  6. Scoop tablespoon-sized portions onto a lined baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes, until edges are firm but centers remain soft.
  8. Let cool for a couple of minutes before transferring to a cooling rack.
  9. Melt remaining chocolate and dip cookie tops, sprinkle with crushed peppermint, and let set.

Notes

Store cookies in an airtight container for up to a week. They can also be frozen for later enjoyment.
