Description

Deliciously soft and chewy cookies infused with rich chocolate and refreshing peppermint, perfect for festive gatherings and family treats.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla and peppermint extracts.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Scoop out the dough using a tablespoon, roll into balls, and place them on the prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes until set around the edges but still soft in the center.
  9. Let them rest for a couple of minutes before transferring to a wire rack to cool completely.
  10. Sprinkle crushed peppermint candies on top while still warm.

Notes

For gluten-free, substitute with gluten-free all-purpose flour. For dairy-free, use plant-based butter and dairy-free chocolate chips.
