- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp peppermint extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
- In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla and peppermint extracts.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Scoop out the dough using a tablespoon, roll into balls, and place them on the prepared baking sheets, spacing about 2 inches apart.
- Bake for 10-12 minutes until set around the edges but still soft in the center.
- Let them rest for a couple of minutes before transferring to a wire rack to cool completely.
- Sprinkle crushed peppermint candies on top while still warm.
Notes
For gluten-free, substitute with gluten-free all-purpose flour. For dairy-free, use plant-based butter and dairy-free chocolate chips.
