Instructions
- Preheat the oven to 350°F (175°C).
- Mix the flour, cocoa powder, baking soda, and a pinch of salt in a bowl.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract until well combined.
- Combine the dry ingredients into the wet mixture, mixing gently until just combined.
- Add the peppermint extract, adjusting to taste.
- Scoop rounded tablespoons of dough onto a lined baking sheet.
- Bake for 9-11 minutes, until the edges are firm.
- Cool on a wire rack.
- Prepare the frosting by mixing powdered sugar, softened butter, heavy cream or milk, and peppermint extract.
- Frost completely cooled cookies.
- Garnish with crushed candy canes if desired.
