Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar

  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup crushed peppermint candies
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
  3. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually mix the dry ingredients into the wet mixture until just combined. Fold in crushed peppermint and chocolate chips.
  6. Drop dough balls onto lined baking sheets, spacing them apart. Bake for 10-12 minutes.
  7. Cool on the baking sheet for a few minutes before transferring them to wire racks.

Notes

Chill the dough for 30 minutes for thicker cookies, and ensure to use fresh baking powder and soda for the best results.
