Ingredients

  • 1 cup Granulated Sugar
  • 1 cup Powdered Sugar
  • 1 teaspoon Peppermint Extract
  • 3.5 oz Dark or Semi-Sweet Chocolate (for drizzling)

Instructions

  1. Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. Prepare the egg whites in a spotless mixing bowl.
  3. Whip the egg whites on medium speed until foamy, then add granulated sugar gradually.
  4. Add powdered sugar and peppermint extract until stiff glossy peaks form.
  5. Pipe or spoon the mixture onto the baking sheet, forming little nests.
  6. Bake for 1.5 to 2 hours until dry but not browned.
  7. Cool completely with the oven door ajar.
  8. Melt the chocolate and drizzle over the cooled meringues.
