Ingredients

  • 1/4 tsp Cream of Tartar

Instructions

  1. Preheat oven to 225°F (110°C) and line baking sheets with parchment paper.
  2. Ensure your mixing bowl is clean and free of grease.
  3. Whip egg whites on medium speed until foamy.
  4. Add cream of tartar and increase speed to medium-high.
  5. Gradually add sugar, one tablespoon at a time, until the mixture is glossy and stiff peaks form.
  6. Fold in peppermint extract and food coloring (if using).
  7. Pipe small mounds onto the prepared baking sheets.
  8. Bake for about 1.5 hours, until meringues are dry to the touch.
  9. Turn off the oven and let cool with the door slightly ajar.
