Ingredients

  • ¾ cup unsalted butter, softened
  • ½ cup brown sugar

  • ¾ cup molasses
  • 1 large egg
  • 1 cup cream cheese, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Cream together the butter and sugars until light and fluffy. Mix in molasses and egg.
  2. In another bowl, whisk together flour, baking soda, and spices, then gradually add to wet mixture.
  3. Wrap dough in plastic and chill for at least 2 hours.
  4. Preheat oven to 350°F (175°C) and roll chilled dough to ¼ inch thick, then cut out shapes.
  5. Bake for 8-10 minutes or until edges are firm.
  6. Cool cookies on a wire rack.
  7. For frosting, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  8. Assemble cookies by spreading frosting on one and topping with another.
