Ingredients

- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- 1 tbsp ground ginger
- 1 tbsp ground cinnamon
- ½ tsp ground nutmeg
- ¾ cup unsalted butter, softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- ¾ cup molasses
- 1 large egg
- 1 cup cream cheese, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Cream together the butter and sugars until light and fluffy. Mix in molasses and egg.
- In another bowl, whisk together flour, baking soda, and spices, then gradually add to wet mixture.
- Wrap dough in plastic and chill for at least 2 hours.
- Preheat oven to 350°F (175°C) and roll chilled dough to ¼ inch thick, then cut out shapes.
- Bake for 8-10 minutes or until edges are firm.
- Cool cookies on a wire rack.
- For frosting, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Assemble cookies by spreading frosting on one and topping with another.
- Serve and enjoy!
