Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, ground ginger, ground cinnamon, and ground cloves. Set aside.
- In a separate bowl, beat the room-temperature butter with brown sugar and molasses until creamy.
- Add the egg and mix until well combined.
- Gradually incorporate the dry mix into the wet ingredients, mixing until just combined.
- Wrap the dough in plastic wrap and refrigerate for about an hour.
- Roll out the dough to about ¼ inch thickness and cut into festive shapes.
- Place cookies on a lined baking sheet and bake for 8-10 minutes.
- Let the cookies cool completely on a wire rack before frosting.
- For frosting, cream together softened cream cheese, softened butter, powdered sugar, and vanilla until fluffy. Spread a layer on half the cookies and top with the remaining cookies.
