Ingredients

  • 4 Bell Peppers (red, yellow, or green)
  • 1 lb Ground Beef (80/20 lean-to-fat ratio)
  • 1 large Onion (sweet or yellow)
  • 2 cloves Garlic (minced)
  • 8 oz Provolone cheese (or Cheez Whiz)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Paprika
  • Optional: Sliced Jalapeños, Fresh Parsley, Breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
  2. In a skillet over medium heat, cook the ground beef until browned. Add diced onions and minced garlic, sautéing until onions are translucent.
  3. Stir in cheese until melted and creamy.
  4. Stuff each pepper generously with the beef mixture and top with additional cheese if desired.
  5. Cover the dish with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes until tops are golden.
  6. Let cool for a few minutes, garnish with fresh herbs or toppings, and serve warm.
