- 4 Bell Peppers (red, yellow, or green)
- 1 lb Ground Beef (80/20 lean-to-fat ratio)
- 1 large Onion (sweet or yellow)
- 2 cloves Garlic (minced)
- 8 oz Provolone cheese (or Cheez Whiz)
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1 tsp Paprika
- Optional: Sliced Jalapeños, Fresh Parsley, Breadcrumbs
Instructions
- Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
- In a skillet over medium heat, cook the ground beef until browned. Add diced onions and minced garlic, sautéing until onions are translucent.
- Stir in cheese until melted and creamy.
- Stuff each pepper generously with the beef mixture and top with additional cheese if desired.
- Cover the dish with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes until tops are golden.
- Let cool for a few minutes, garnish with fresh herbs or toppings, and serve warm.
Notes
For best results, avoid overstuffing the peppers and ensure the filling is warm before stuffing.
