Ingredients

  • 2 cups hash browns (freshly shredded or frozen)
  • 4 large eggs
  • 1 cup dill pickles (whole or relish)
  • 1 cup cheddar or American cheese
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Heat a non-stick skillet over medium heat and melt butter.
  2. Add shredded potatoes, flattening them into an even layer. Season with salt and pepper. Cook for 5-7 minutes until golden brown, then flip and cook for another 5 minutes.
  3. Whisk the eggs in a bowl and pour over the hash browns. Cook for a few minutes until the eggs set slightly.
  4. Add chopped pickles and cheese on top. Cook until cheese melts.
  5. Cut the mixture into squares and place on small buns to form sliders.
  6. Serve hot with pickle juice or dipping sauce.

Notes

For a lighter option, use sweet potatoes instead of hash browns and dairy-free cheese. Experiment with spices for added flavor.
