- 2 cups hash browns (freshly shredded or frozen)
- 4 large eggs
- 1 cup dill pickles (whole or relish)
- 1 cup cheddar or American cheese
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Heat a non-stick skillet over medium heat and melt butter.
- Add shredded potatoes, flattening them into an even layer. Season with salt and pepper. Cook for 5-7 minutes until golden brown, then flip and cook for another 5 minutes.
- Whisk the eggs in a bowl and pour over the hash browns. Cook for a few minutes until the eggs set slightly.
- Add chopped pickles and cheese on top. Cook until cheese melts.
- Cut the mixture into squares and place on small buns to form sliders.
- Serve hot with pickle juice or dipping sauce.
Notes
For a lighter option, use sweet potatoes instead of hash browns and dairy-free cheese. Experiment with spices for added flavor.
