Ingredients

  • 1 1/2 cups crushed graham crackers
  • 1/4 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 8 oz white chocolate, melted
  • 3 large eggs
  • 1 cup shelled and unsalted pistachios, finely chopped
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine crushed graham crackers, melted butter, and a pinch of sugar. Press into the bottom of a 9-inch springform pan and bake for 8-10 minutes. Set aside to cool.
  2. In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and blend until well incorporated. Fold in melted white chocolate.
  3. Beat in the eggs one at a time, mixing gently to avoid over-mixing.
  4. Stir in finely chopped pistachios.
  5. Pour the batter over the cooled crust and smooth the top.
  6. Bake for 50-60 minutes until the center is set but slightly jiggly. Turn off the oven and let it cool inside to prevent cracks.
  7. After an hour, cool completely at room temperature, then refrigerate for at least 4 hours.
  8. To serve, run a knife around the edge, release the springform pan, slice, and enjoy.

Notes

Use room temperature ingredients for the best texture. Avoid over-mixing after adding eggs to prevent a dense cheesecake.
