- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup chopped pistachios, roasted
- 1 cup dried cranberries
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Line your baking sheet with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg until the mixture is smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture, stirring until just combined.
- Fold in the chopped pistachios and cranberries.
- Scoop out tablespoon-sized amounts of dough and shape them into wreaths on the prepared baking sheet, leaving space in between.
- Bake for 10-12 minutes or until the edges are light golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack. Dust with powdered sugar before serving.
Notes
Chill the cookie dough for about 30 minutes before baking to maintain shape. Use a piping bag for a cleaner wreath shape.
