  • 1/2 cup brown sugar
  • 1 large egg
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup chopped pistachios, roasted
  • 1 cup dried cranberries
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheet with parchment paper.
  3. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg until the mixture is smooth.
  5. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture, stirring until just combined.
  6. Fold in the chopped pistachios and cranberries.
  7. Scoop out tablespoon-sized amounts of dough and shape them into wreaths on the prepared baking sheet, leaving space in between.
  8. Bake for 10-12 minutes or until the edges are light golden brown.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack. Dust with powdered sugar before serving.

Notes

Chill the cookie dough for about 30 minutes before baking to maintain shape. Use a piping bag for a cleaner wreath shape.
