Ingredients

  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 tbsp baking powder

  • 1 1/2 cups mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 cup crushed pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. In a bowl, whisk together cake flour, baking powder, and salt. Set aside.
  3. In a mixing bowl, cream the unsalted butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk.
  6. Gently fold in crushed pistachios.
  7. Divide the batter evenly between prepared pans and bake for 25-30 minutes.
  8. Allow cakes to cool in pans for 10 minutes before transferring to wire racks.
  9. For the filling, whisk mascarpone with powdered sugar and fold in more crushed pistachios.
  10. Once cakes are cool, assemble by spreading a layer of mascarpone filling between the layers and on top.
  11. Chill in the refrigerator for at least an hour before serving.

For a dairy-free version, substitute unsalted butter with coconut oil and mascarpone with a dairy-free cream cheese alternative.
