- 3 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1 tbsp baking powder

- 1 1/2 cups mascarpone cheese
- 1/2 cup powdered sugar
- 1 cup crushed pistachios
Instructions
- Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
- In a bowl, whisk together cake flour, baking powder, and salt. Set aside.
- In a mixing bowl, cream the unsalted butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then add vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk.
- Gently fold in crushed pistachios.
- Divide the batter evenly between prepared pans and bake for 25-30 minutes.
- Allow cakes to cool in pans for 10 minutes before transferring to wire racks.
- For the filling, whisk mascarpone with powdered sugar and fold in more crushed pistachios.
- Once cakes are cool, assemble by spreading a layer of mascarpone filling between the layers and on top.
- Chill in the refrigerator for at least an hour before serving.
Notes
For a dairy-free version, substitute unsalted butter with coconut oil and mascarpone with a dairy-free cream cheese alternative.
