Ingredients

- 1 lb ground beef
- 8 flour or corn tortillas
- 2 cups enchilada sauce
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup pepperoni (optional)
- 1 cup sautéed onions
- 1 cup bell peppers (optional)
- 1 tbsp taco seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, sauté diced onions until translucent. Add the ground beef, breaking it apart with a spatula. Season with taco seasoning and cook until browned, about 5–7 minutes. Drain excess fat.
- Warm tortillas in a dry skillet to make them pliable.
- Spoon a generous portion of the beef mixture down the center of each tortilla, sprinkle with cheese and pepperoni if desired, then roll them up tightly and place seam-side down in a baking dish.
- Pour enchilada sauce over the rolled enchiladas and sprinkle remaining cheese on top.
- Bake for 20-25 minutes, or until cheese is bubbly and slightly golden.
- Garnish with fresh cilantro or green onions before serving.
- Serve with sour cream or guacamole.
