Description

A flavorful roast chicken dish featuring a sweet and tangy pomegranate glaze balanced by the earthy notes of sumac.

Ingredients

Scale
  • 4 chicken pieces (legs or thighs)
  • 1 cup pomegranate juice (100% pure)
  • 2 tablespoons ground sumac
  • 2 tablespoons olive oil
  • 4 cloves fresh garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (like parsley or mint) for garnishing

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken pieces dry with a paper towel.
  3. Mix together the pomegranate juice, ground sumac, olive oil, minced garlic, salt, and pepper in a large bowl.
  4. Add the chicken pieces to the bowl and coat fully. Let marinate for at least 30 minutes, or overnight for more flavor.
  5. Place the marinated chicken on a lined baking sheet and roast for 40-45 minutes, until golden and the internal temperature reaches 165°F (75°C).
  6. Optional: Switch to broil for the last few minutes for extra crispiness.
  7. Garnish with freshly chopped herbs before serving.

Notes

Let the chicken rest after cooking to retain moisture. Serve with roasted vegetables or a salad for a complete meal.
