- 1 cup pomegranate juice (100% pure)
- 2 tablespoons ground sumac
- 2 tablespoons olive oil
- 4 cloves fresh garlic, minced
- Salt and pepper to taste

Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken pieces dry with a paper towel.
- Mix together the pomegranate juice, ground sumac, olive oil, minced garlic, salt, and pepper in a large bowl.
- Add the chicken pieces to the bowl and coat fully. Let marinate for at least 30 minutes, or overnight for more flavor.
- Place the marinated chicken on a lined baking sheet and roast for 40-45 minutes, until golden and the internal temperature reaches 165°F (75°C).
- Optional: Switch to broil for the last few minutes for extra crispiness.
- Garnish with freshly chopped herbs before serving.
