- 1 cup sauerkraut, drained and rinsed
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 green onions, sliced
- 1 beaten egg (for sealing)
- Spring roll wrappers
- Oil for frying
Instructions
- Prepare the filling: Mince the garlic and ginger, sauté in oil until fragrant, then add pork and cook until browned. Stir in sauerkraut and season.
- Set up your workspace: Keep spring roll wrappers covered with a damp towel to prevent drying.
- Roll it up: Fill a wrapper with 2 tablespoons of filling, fold sides, and roll tightly sealing with egg.
- Heat oil in a pot to 350°F and fry the rolls until golden brown, about 3-4 minutes per side.
- Serve with dipping sauce, such as a blend of soy sauce and vinegar.
Notes
Ensure oil is hot enough before frying; monitor closely to avoid greasy rolls. Don’t overload wrappers to prevent bursting.
