- 1 Beef Chuck Roast
- 1 cup Tart Cherries (fresh, frozen, or jarred)
- 2 cups Chicken or Beef Stock
- 2 Onions, chopped
- 4 cloves Garlic, minced
- 2 tsp Black Pepper, freshly cracked
- 2 tbsp Olive Oil
- 2 sprigs Fresh Rosemary
- 2 sprigs Fresh Thyme
Instructions
- Bring beef chuck roast to room temperature and season with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat and sear the roast for 4-5 minutes on each side until golden brown.
- Remove the roast and sauté onions and garlic in the same skillet until soft (3-5 minutes).
- Add tart cherry juice and scrape the bottom of the skillet to deglaze.
- Add fresh cherries, black pepper, and herbs, stirring to combine.
- Return the roast to the skillet, cover, reduce heat to low, and braise for 2-3 hours until fork-tender.
- Drizzle sauce over the roast before serving and garnish with fresh herbs.
Notes
For a vegetarian option, substitute beef with pork or plant-based alternatives like seitan or jackfruit.
