Description

A comforting and nostalgic Puff Pastry Turkey Pot Pie filled with tender turkey, rich gravy, and a medley of vegetables.


Ingredients

  • 2 cups leftover turkey, diced
  • 1 sheet frozen puff pastry
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup celery, diced
  • 1 cup mushrooms, diced (optional)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh parsley
  • 2 cups turkey or chicken broth
  • 1/2 cup cream or milk
  • 2 tablespoons flour
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat butter over medium heat. Add onions and garlic, cooking until soft and fragrant.
  3. Include carrots, celery, and any other vegetables. Stir in the turkey and warm through.
  4. Sprinkle flour over the mixture and stir for a minute. Gradually pour in broth, whisking until thickened. Add cream, and season with salt, pepper, and herbs.
  5. Pour the turkey mixture into a baking dish. Cover with rolled out puff pastry, tucking edges in and cutting slits on top.
  6. Bake for 30-40 minutes, or until the crust is golden and puffy.
  7. Let it cool for a few minutes before serving.

Notes

For best results, ensure the puff pastry is cold before baking. An egg wash on top adds a lovely sheen.
