Ingredients

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup brown sugar
  • 1 cup crushed graham crackers (or vanilla wafers)
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 8 oz white or dark chocolate, for dipping

Instructions

  1. Mix the cream cheese and pumpkin in a bowl until smooth.
  2. Add powdered sugar, brown sugar, and vanilla, mixing until creamy.
  3. Stir in the pumpkin pie spice and adjust to taste.
  4. Refrigerate for 1-2 hours to firm up the mixture.
  5. Shape the chilled mixture into 1-inch balls and place on a parchment-lined baking sheet.
  6. Melt the chocolate in a double boiler or microwave in short bursts.
  7. Dip each truffle into the melted chocolate, letting excess drip off and roll in crushed graham crackers if desired.
  8. Place coated truffles back on parchment to set and chill for 30 minutes before serving.

Notes

Ensure chocolate is smooth for easy dipping. If too thick, add a bit of coconut oil.
