- 1 cup powdered sugar
- 1/2 cup brown sugar
- 1 cup crushed graham crackers (or vanilla wafers)
- 1 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 8 oz white or dark chocolate, for dipping
Instructions
- Mix the cream cheese and pumpkin in a bowl until smooth.
- Add powdered sugar, brown sugar, and vanilla, mixing until creamy.
- Stir in the pumpkin pie spice and adjust to taste.
- Refrigerate for 1-2 hours to firm up the mixture.
- Shape the chilled mixture into 1-inch balls and place on a parchment-lined baking sheet.
- Melt the chocolate in a double boiler or microwave in short bursts.
- Dip each truffle into the melted chocolate, letting excess drip off and roll in crushed graham crackers if desired.
- Place coated truffles back on parchment to set and chill for 30 minutes before serving.
