- 2 large eggs

- 1 tsp vanilla extract

- 1 tbsp butter (for cooking)
- Powdered sugar (for serving)
- Maple syrup (for serving)
Instructions
- In a mixing bowl, combine pumpkin puree, eggs, milk, vanilla extract, cinnamon, and nutmeg. Mix until smooth.
- Flatten each slice of bread with a rolling pin.
- Spread pumpkin mixture on one edge of each slice and roll up, tucking in the sides.
- Heat a skillet over medium heat and melt the butter.
- In a shallow bowl, whisk together eggs and milk. Dip each roll in this mixture.
- Place rolls seam-side down in the skillet, cooking for 2-3 minutes on each side until golden brown.
- Serve warm, sprinkled with powdered sugar and drizzled with maple syrup.
