Description

A delightful Pumpkin Oat Tart that combines the earthy sweetness of pumpkin with the wholesome goodness of oats, perfect for fall.


Ingredients

  • 1 ½ cups rolled oats
  • ½ cup melted butter (or coconut oil)
  • ¼ cup brown sugar (or maple syrup)
  • 1 cup pumpkin puree
  • 2 eggs (or flax eggs)
  • ½ cup sugar (or maple syrup)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine 1 ½ cups of rolled oats, ½ cup of melted butter (or coconut oil), and ¼ cup of brown sugar in a bowl. Mix until it resembles wet sand and press into a greased tart pan.
  3. Bake the crust for around 10-15 minutes until just set.
  4. Meanwhile, whisk together 1 cup of pumpkin puree, 2 eggs, ½ cup of sugar (or maple syrup), 1 tsp of cinnamon, ½ tsp of nutmeg, ½ tsp of ginger, and a pinch of salt in a medium bowl.
  5. Pour the pumpkin filling over the crust and bake for another 30-35 minutes until set.
  6. Cool in the pan before serving. Enjoy with whipped cream or ice cream!

Notes

For added flavor, consider toasting your oats lightly before mixing. You can also add different spices or toppings like toasted pecans.
