Ingredients

  • 1 cup Confectioners’ Sugar
  • 3 Egg Whites
  • 1/2 cup Pumpkin Purée
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1/2 tsp Ground Ginger
  • 1/2 cup Unsalted Butter (room temperature)
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Line two baking sheets with parchment paper or silicone baking mats.
  3. Sift together almond flour, confectioners’ sugar, and spices to eliminate lumps.
  4. Whip egg whites until soft peaks form, gradually adding granulated sugar until stiff peaks form.
  5. Fold in the sifted almond flour mixture gently.
  6. Pipe circular blobs onto the prepared baking sheets.
  7. Rest the piped macarons for 30-60 minutes.
  8. Bake for 15-20 minutes until firm to touch.
  9. Let cool before removing from sheets.
  10. Prepare the filling by mixing butter, pumpkin purée, confectioners’ sugar, and vanilla until smooth.
  11. Assemble the macarons by spreading the filling on one shell and topping with another.
  12. For best flavor, let them rest in the fridge for a day before serving.

Notes

Ensure bowls and utensils are grease-free for the best results. Rotating baking sheets halfway through baking helps with even cooking.
