Ingredients

- 1 block firm tofu
- 1 tsp turmeric
- 3 tbsp nutritional yeast
- 1 cup fresh vegetables (bell peppers, spinach, or mushrooms)
- 1 tbsp fresh herbs (chives, parsley, or cilantro)
- Salt and pepper, to taste
- 1 splash of plant milk
- Olive oil, for sautéing
Instructions
- Drain and press the firm tofu to remove excess moisture, then crumble it into a mixing bowl.
- Add turmeric, nutritional yeast, salt, pepper, and a splash of plant milk to the crumbled tofu, and mix well.
- In a non-stick skillet, heat olive oil over medium heat, then sauté the chopped vegetables until tender, about 5-7 minutes.
- Fold the tofu mixture into the sautéed vegetables in the skillet and flatten it out slightly with a spatula. Cook for 5-10 minutes until golden brown.
- Flip the omelette carefully if desired, then serve immediately, garnished with fresh herbs.
Notes
You can customize the omelette by using different vegetables or spices based on what you have on hand. Be patient while cooking for the fluffiest result.
