- 1 cup quinoa
- 2 cups water
- 2 eggs
- 1 cup shredded cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian herbs
- 1/2 teaspoon salt
Instructions
- Rinse the quinoa under cold water for about 2 minutes to remove bitterness.
- Cook the quinoa in a pot with 2 cups of water. Bring to a boil, reduce to a simmer, cover, and cook for about 15 minutes until water is absorbed.
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Fluff the cooked quinoa with a fork and let cool slightly.
- In a mixing bowl, combine quinoa, eggs, cheese, minced garlic, herbs, and salt. Mix well.
- Spread the mixture evenly onto the baking sheet, shaping it into a crust about 1/2 inch thick.
- Bake for 15-20 minutes until the crust is golden and firm.
- Add your favorite toppings and bake for an additional 10-15 minutes until cheese is melted and toppings are heated.
- Slice and serve immediately, optionally drizzling with olive oil or balsamic glaze.
Notes
Mix in flavored olive oil or nutritional yeast for a cheesier flavor. For vegan options, substitute eggs with flax eggs and cheese with almond flour.
