- 1 cup quinoa
- 2 cups water
- Rice paper wrappers
- Bell peppers, thinly sliced
- Carrots, thinly sliced
- Cucumber, thinly sliced
- Sprouts
- Fresh basil
- Fresh mint
- Fresh cilantro
- Soy sauce
- Lime juice
- Sesame oil
- Honey
- Sriracha (optional)
Instructions
- Rinse quinoa under cold water. In a pot, combine quinoa with water and a pinch of salt. Bring to a boil, then simmer for 15 minutes until fluffy. Let cool.
- Thinly slice your choice of veggies.
- Fill a shallow dish with warm water and soak one rice paper wrapper for about 10 seconds until softened. Lay out on a clean surface.
- Start with a spoonful of quinoa in the center of the wrap. Layer with slices of veggies and herbs on top.
- Fold the sides of the rice paper inward, then gently roll it up from the bottom. Repeat with remaining wrappers.
- In a small bowl, whisk together soy sauce, lime juice, sesame oil, and honey; add sriracha if desired.
- Serve the rolls on a platter with dipping sauce.
