- ½ cup granulated sugar
- 2 cups all-purpose flour
- 4 large eggs
- 1 cup granulated sugar (for filling)
- 2/3 cup fresh lemon juice
- Zest of 1 lemon
- 1 cup fresh raspberries
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the butter, sugar, and flour to form a crumbly dough. Press into the bottom of a greased 9×13-inch baking dish.
- Bake for 15-20 minutes until light golden brown.
- Whisk together eggs, sugar, lemon juice, and zest in a bowl. Fold in raspberries gently.
- Pour the raspberry lemon mixture over the baked crust and bake for an additional 20-25 minutes until the filling is set but slightly jiggly.
- Cool completely on a wire rack, then refrigerate for at least 2 hours before serving. Dust with powdered sugar before cutting into squares.
Notes
Use fresh raspberries for best results; if using frozen, make sure to thaw and drain them first. Allow bars to cool completely for neat cuts.
