  • 1 cup powdered sugar, for dusting

Instructions

  1. Prepare the dough: Cream softened unsalted butter and sugar together until light and fluffy. Mix in the egg yolk and almond extract.
  2. Incorporate dry ingredients: Gradually add flour and ground nuts, mixing until just combined.
  3. Chill: Divide the dough, wrap in plastic, and refrigerate for at least 60 minutes.
  4. Roll out: Preheat oven to 350°F (175°C). Roll out the dough to 1/4 inch thick and cut out shapes.
  5. Bake: Bake cookies for 10-12 minutes until golden around the edges.
  6. Cool & fill: Cool cookies, dust with powdered sugar, spread jam on whole cookies, and sandwich them.
