- 1/2 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup ground almonds or hazelnuts
- 1 egg yolk
- 1 teaspoon almond extract
- 1 cup raspberry jam
- 1 cup powdered sugar, for dusting
Instructions
- Prepare the dough: Cream softened unsalted butter and sugar together until light and fluffy. Mix in the egg yolk and almond extract.
- Incorporate dry ingredients: Gradually add flour and ground nuts, mixing until just combined.
- Chill: Divide the dough, wrap in plastic, and refrigerate for at least 60 minutes.
- Roll out: Preheat oven to 350°F (175°C). Roll out the dough to 1/4 inch thick and cut out shapes.
- Bake: Bake cookies for 10-12 minutes until golden around the edges.
- Cool & fill: Cool cookies, dust with powdered sugar, spread jam on whole cookies, and sandwich them.
