Description

Delightful Raspberry Linzer Cookies with buttery cookie dough and sweet-tart raspberry jam, perfect for gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup ground almonds or hazelnuts
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup powdered sugar (for dusting)
  • 3/4 cup raspberry jam
  • 1 tsp vanilla extract
  • 1 egg yolk

Instructions

  1. Cream the unsalted butter and granulated sugar together in a mixing bowl until light and fluffy.
  2. Mix in the egg yolk and vanilla extract.
  3. Gradually add in the flour and ground almonds or hazelnuts, mixing until the dough just comes together.
  4. Wrap the dough in plastic wrap and refrigerate for at least 60 minutes.
  5. On a lightly floured surface, roll out the dough to about 1/4-inch thickness. Cut shapes using cookie cutters.
  6. Preheat your oven to 350°F (175°C) and bake the cookies for 10-12 minutes until edges are slightly golden.
  7. Spread raspberry jam on whole cookies, then top with cut-out cookies. Dust with powdered sugar before serving.
