- 2 cups all-purpose flour
- 1 cup ground almonds or hazelnuts
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup powdered sugar (for dusting)
- 3/4 cup raspberry jam
- 1 tsp vanilla extract
- 1 egg yolk
Instructions
- Cream the unsalted butter and granulated sugar together in a mixing bowl until light and fluffy.
- Mix in the egg yolk and vanilla extract.
- Gradually add in the flour and ground almonds or hazelnuts, mixing until the dough just comes together.
- Wrap the dough in plastic wrap and refrigerate for at least 60 minutes.
- On a lightly floured surface, roll out the dough to about 1/4-inch thickness. Cut shapes using cookie cutters.
- Preheat your oven to 350°F (175°C) and bake the cookies for 10-12 minutes until edges are slightly golden.
- Spread raspberry jam on whole cookies, then top with cut-out cookies. Dust with powdered sugar before serving.
Notes
Ensure not to overwork the dough to avoid tough cookies. Chill the dough adequately for best results.
