Ingredients

  • ½ cup unsalted butter, softened
  • 1 cup sugar (mix of brown and granulated)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • Pinch of salt
  • Optional: chopped walnuts or dark chocolate chips for mixing in
  • Frosting: 8 oz cream cheese (softened), 1 cup powdered sugar, ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan, lining it with parchment paper.
  2. Mash the bananas in a large bowl until smooth, leaving some chunks for texture.
  3. In another bowl, beat the softened butter with sugar until fluffy.
  4. Add eggs one at a time, then stir in vanilla extract.
  5. Mix the banana puree with the butter-sugar-egg mixture.
  6. Slowly add flour, baking soda, and salt; stir until just combined.
  7. Fold in any nuts or chocolate chips if using.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  10. Cool the loaf in the pan for about 10 minutes, then transfer to a wire rack.
  11. For the frosting, whip together cream cheese, powdered sugar, and vanilla until smooth. Spread it on the cooled banana bread.
