- 8 oz. cream cheese, softened
- 1 cup powdered sugar
- 1 tablespoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a muffin tray with paper liners.
- In a bowl, whisk together the flour, cocoa powder, baking soda, and baking powder.
- In a separate bowl, mix the sugar and vegetable oil. Add the eggs, buttermilk, and red food coloring, stirring until combined.
- Gradually add the dry mixture to the wet mixture, folding gently until just combined.
- Fill each muffin liner about two-thirds full.
- Bake for 18-20 minutes, checking doneness with a toothpick.
- To make the frosting, whip together the cream cheese, powdered sugar, and vanilla extract until smooth.
- Once the muffins are cool, frost them generously and top with optional cocoa powder or chocolate chips.
Notes
For a lighter frosting, consider using Greek yogurt instead of cream cheese. Allow muffins to cool completely before frosting to prevent melting.
