Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tray with paper liners.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and baking powder.
  3. In a separate bowl, mix the sugar and vegetable oil. Add the eggs, buttermilk, and red food coloring, stirring until combined.
  4. Gradually add the dry mixture to the wet mixture, folding gently until just combined.
  5. Fill each muffin liner about two-thirds full.
  6. Bake for 18-20 minutes, checking doneness with a toothpick.
  7. To make the frosting, whip together the cream cheese, powdered sugar, and vanilla extract until smooth.
